PostHeaderIcon Make It Low-Carb Monday: Dairy-Free, Grain-Free Cream of Mushroom Soup

Campbells Cream of Mushroom Soup has long been a staple in many of my recipes. When I started a low-carb lifestyle I turned to a low-carb cream of mushroom bacon soup from my pal Jaimie over at The Lighter Side of Low-Carb. Now that I’ve discovered I’m allergic to dairy I’ve set out on a mission for a new recipe that complies with my food allergies and just in time for Thanksgiving. I don’t think the man-friend could live through Turkey Day without his beloved green bean casserole!

I’ve chosen to sub the cream and half and half that most cream of mushroom soup recipes call for with unsweetened almond milk. This came out pretty great, so I think any milk substitute would work in this recipe.  I also chose to use the crock-pot here since this is an ingredient that I use in other recipes. I need to be able to scale it easily to make large batches for canning and it’s just plain easier to throw it all in the pot and let it cook so I can make this any time.

I’m on the hunt for side dishes!

I’ve never been a huge fan of coleslaw and I suspect it is because most traditional coleslaw is sweet. So I set out to create my own recipe that is tangy and not sweet, my pal Jamie over at Your Lighter Side has a great recipe if you like it sweet and I’ve used her recipe as inspiration for this version.

It came out great and I’ll definitely make it again. Enjoy!

PostHeaderIcon Low-Carb Peanut Butter Dream Pie

I was in the mood for something sweet tonight and went searching for a good pie recipe. I have a stellar low-carb pumpkin pie recipe and a really great raspberry cheesecake recipe, but I’ve made both of these a lot and it’s time for something new.

I stumbled across this recipe for low-carb peanut butter pie and it sounded easy. I happened to have all the ingredients on hand so I thought I’d try it out in my go to almond pie crust.

The pie turned out to be very good and definitely filled my need for something sweet! The whipped cream gives the pie a very light and fluffy texture that is just divine.

PostHeaderIcon Best Low-Carb Brownies Ever!

You just might fool the biggest chocoholic with this one! This brownie recipe is amazing, the original recipe can be found here, I can’t take credit for it. I did make some edits, but this one belongs to the incredible Laura Dolson over at about.com. She’s fantastic and I love her stuff, you should check her out!

These are just like the real thing. Texture, taste, everything is fantastic about these. I’ll definitely make them again. I think I’ll use only almond flour and skip the flax in the future just to make them completely grain-free.
