PostHeaderIcon Make it Low-Carb Monday: Coleslaw

I’m on the hunt for side dishes!

I’ve never been a huge fan of coleslaw and I suspect it is because most traditional coleslaw is sweet. So I set out to create my own recipe that is tangy and not sweet, my pal Jamie over at Your Lighter Side has a great recipe if you like it sweet and I’ve used her recipe as inspiration for this version.

It came out great and I’ll definitely make it again. Enjoy!

PostHeaderIcon Low-Carb Frosted Lemon Blueberry Cake

Recipes always come out of cravings right?

This one is no exception, I was craving something sweet and my man-friend was craving blueberry muffins. This is what I came up with, it’s not too sweet, more like a breakfast loaf then a cake. But I thought it was tasty enough to share.

PostHeaderIcon Low-Carb Blueberry Swirl Cheesecake

I got some fantastic looking blueberries at the farmer’s market this weekend and I wasn’t sure what to do with them. They kept staring at me every time I opened the refrigerator.

Since I have a fabulous cheesecake recipe, I thought why not try something different and work on a blueberry puree that I could swirl into the cheesecake?

This is what I tried and it turned out to be the most beautiful cheesecake I’ve made yet. Tasted pretty darn good too!

I may play with this a bit, but it’s good enough to release for your culinary experimentation.

PostHeaderIcon Low-Carb Fourth of July Cheesecake With Fresh Berries!

Happy Fourth of July!

This year we were invited to several pool party BBQ’s and I new I was going to land face to face with tables upon tables of cakes, cookies, brownies, ice cream, and cupcakes. I new I’d need a safe dessert to get me through the day and decided to spruce up my cheesecake recipe for a patriotic dessert that wouldn’t hit me upside the head with sugar coma.

This turned out so fabulous that it was the first dessert to disappear at the party, I’m glad I hid it in the fridge until I was ready for a piece! Many said it was the best cheesecake they’ve had in years…they were amazed it was sugar free.

PostHeaderIcon Low-Carb Peanut Butter Dream Pie

I was in the mood for something sweet tonight and went searching for a good pie recipe. I have a stellar low-carb pumpkin pie recipe and a really great raspberry cheesecake recipe, but I’ve made both of these a lot and it’s time for something new.

I stumbled across this recipe for low-carb peanut butter pie and it sounded easy. I happened to have all the ingredients on hand so I thought I’d try it out in my go to almond pie crust.

The pie turned out to be very good and definitely filled my need for something sweet! The whipped cream gives the pie a very light and fluffy texture that is just divine.
