I love making hearty meals this time of year. When it starts to get cold and you see twinkly lights and articles about the mayhem of Black Friday it’s time to make something hearty and warm to share with your family or friends. I happened to have some thick center cut pork chops in the freezer and they looked like the perfect start to a hearty meal, perfect for stuffing!
I also follow Paleo Parents and caught a glimpse of their recipe for Bacon & Apple Stuffed Pork Chops which gave me inspiration to stuff more pork into these beauties along with some greens. I’m getting sick of apples and I’m not a big fan of them when they’re warm so spinach and sun-dried tomatoes would be my substitution!

We love BBQ at our house and prior to my gluten allergy diagnosis we used to hang out at Famous Dave’s BBQ. I can’t eat there any longer as they use wheat in their sauces and every dish seems to be contaminated.
I can’t even eat this salmon spread, but it’s a favorite with my other half so I reverse engineered it from the menu and I do make it for him on occasion.
For those of you who can eat dairy, it’s a real treat!
I’ve been craving sauerkraut for days now, but I haven’t been in the mood for hotdogs. I usually scoop the kraut over Hebrew Nationals and slather on the mustard. I was on the hunt for something different and I ran into a fantastic sale on jumbo wild caught shrimp at Sprouts Farmer’s Market. If you follow The Rogue Cookie Facebook Page, then you know how much I love Sprouts. This grocery chain always has great prices, the freshest produce, and really great seasonal meats and seafood.

I’m a huge fan of Giada De Laurentiis, she’s gorgeous and makes fantastic recipes that I can easily convert to fit my dietary needs. I have every cookbook she’s ever published and am mesmerized every time she shows up on the Food Network.
A while back I found her Tuna and Tomato Sauce recipe and even though I was skeptical I tried it. Wow, it’s amazing and I’ve been making it ever since. Way back I used regular pasta, then I switched to Dream Fields, and now that I’ve been diagnosed with a gluten allergy I put it over spaghetti squash. You can use whatever pasta substitute you like, but here’s how I make it…
Today my man-friend had a hankering for some good ol’ fried chicken, so I starting digging through my flour subs to see what I could come up with. I think I hit the jackpot with this recipe.
