Ingredients
  

  • 5 Medium Sized Potatos
  • 4 Eggs optional
  • 2 Celery stalks
  • 1/4 Fennel
  • 1 Spring Onion Green part only for Low FODMAP version
  • 1 Small Bunch of Parsley
  • 3 Strips bacon
  • 2 Tbs of Olive Oil
  • 2 Tbs Lemon Juice Fresh Squeezed

Instructions
 

  • Peel and chop the potatoes into bite-sized pieces. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a gentle boil and cook for 10-15 minutes, until tender but firm (test with a fork). Drain and allow to cool for 5-10 minutes until they no longer give off steam.
  • While the potatoes are boiling, finely chop the celery, fennel, spring onion, and parsley. Add them to a large bowl.
  • Once the potatoes have cooled slightly, toss them with a little olive oil and cracked black pepper. Crisp them in an air fryer at 200°C (400°F) for 10-15 minutes, stirring halfway, or alternatively, you can roast them in the oven at 220°C (425°F) for 20-25 minutes, turning halfway. Sprinkle with a pinch of salt, let cool slightly, and add to the bowl.
  • As the potatoes crisp, if using eggs: place the eggs in a saucepan, cover with water, and bring to a boil over medium-high heat. Once boiling, cook for 7 minutes. Transfer to ice water for 5 minutes, peel, quarter, and add to the bowl.
  • While the eggs are cooling, chop the bacon into bite-sized pieces and fry in a skillet over medium heat until crispy, stirring occasionally. Drain on a paper towel-lined plate for 5 minutes, then add to the bowl.
  • Add all the prepared ingredients to the bowl. Drizzle with freshly squeezed lemon juice, season with salt and pepper, and toss gently to combine. Serve immediately, or chill for 30 minutes to let the flavors meld.
